You shouldn't have any trouble finding those honestly. I've seen them available plenty in the last several months anyone. You're just going to need to bring some serious cash.
Console- $300+ ?
Gauges- $250+ ?
In addition to this sites' classified ads, and eBay and Craigslist, there are a few Impala groups on Facebook and I have seen them selling the very parts you're looking for.
One is "1965 1966 Midwest Impala cars and parts.

1966 impala ss
I’ve got a 66’ ss 327/2sp. PG, and I have thought about changing that to a 327/ with a 4 speed. But I am curious as to where will I find a 4 speed/ date correct and a console? Any help would be much appreciated.
And Id like to have all the gauges but I know they can be a trick to find, and also you’d have to mess with dash so just a 4 speed date correct and console will do!
