Looking for ideas. Changed plugs and cleaned carb with spray last night. Car started super fast today, idle was lower, ran crappy and fuel gauge is pegged full now... Looking for any ideas.

The first obvious thing would be the spark plug gap. Even if you set them, it sucks but is easy enough to pull them out and double check that a tip didn't get hit as they were going in.
It's also possible that your carb spray dislodged some build-up and it's clogging something like an air bleed..
You could try a lot more carb cleaner while the engine is running and you're winging the throttle.
I've also heard of people creating a suction by having some RPMs up and then covering the carb quickly with a wadded-up rag to kill the motor.

Did you get any carb cleaner on you plugs, wires, distributor, or coil? That stuff will break down insulation and allow for tracking on the surface.

How old is the car or when was the last rebuild? The carb cleaner could have finished off old gaskets and now you have a leak someplace in the carb.
